Harvest Meals are here, and this is a quick and easy side dish to add to any of your favorite meals.
This recipe is a favorite of mine introduced to me by my sister-in-law Shellie. It is easy to make, tasty, filling and healthy (BONUS!)
I like to add some extra protein to mine by adding in some Tuna, Chicken, Shrimp or Beef.

Quinoa Salad

Healthy and fresh quinoa salad

- 2 Cup Tri-Colored Quinoa
- 1 1/2 English Cucumber
- 1/2 Cup Chives Chopped
- 1 1/2 Cups Feta Cheese Herb & Garlic
- 3 Halves Bell Pepper Assorted Colors
- 2 Tbsp Parsley Fresh Chopped
- 2 Tbsp Cilantro (Optional) Fresh chopped
- 1 1/2 Cup Grape or Cherry Tomatoes Cut in Half
- 1/4 Bottle Renees Sweet Onion Vinagrette Dressing
Cook Quinoa according to package directions, drain and cool
Chop tomatoes, cucumber, peppers.
Chop fresh herbs and add to veggies
Add veggies and herbs to cooled quinoa
Mix feta cheese into quinoa, veggies and herbs
Pour dressing over top and mix well.
